With an ancient brewing tradition, the Nada regions are known for brewing some of the best sake in all of Japan. The brown tone corresponds to the color of the cedar branch balls that hang in front of the brewers in the breweries. At the start of the brewing season these are green, but by November and December the cedar branches are browned, indicating that the sake has matured to its peak of smoothness and depth of flavor.
